This ridiculously delicious cookie recipe is inspired by my sister Marie, who just graduated college and gets very creative when she's craving sweets!
2 sticks butter (8 oz), at room temperature
2 cups packed brown sugar
2 eggs
1 tsp baking soda
2 ½ cups flour
1/4 tsp fine sea salt
1 cup coarsely chopped dark chocolate
1 cup coarsely chopped milk chocolate
1/4 cup toasted unsweetened coconut flakes
1/4 cup macadamia nuts, chopped (optional)
1/4 cup toffee or caramel pieces, chopped
1) Cream butter with the brown sugar until it looks light and fluffy.
2) Add your eggs and salt and scrape the bowl well. Keep mixing for 1 more minute and add the chocolates, coconut and candy pieces. Mix until just combined.
3) In a separate bowl, whisk together the flour and baking soda. Add to the butter mixture and mix until just combined.
4) Spoon your dough onto a parchment-paper lined cookie sheet.
5) Bake at 350 until lightly golden brown around the edges (longer if you like a crispy cookie).
