Chocolate Cookies
3 1/4 sticks butter
3/4 cup sugar
1 egg
3 2/3 cups flour
1/2 cup cocoa powder
1 tsp salt
1/4 cup toasted hazelnuts
1 egg white
1) In a stand or with a hand mixer, cream together the butter and sugar.
2) Add the egg and salt and mix for another minute. Scrape well.
3) Add the flour and cocoa powder and mix just until the mixture comes together.
4) Wrap the remaining dough with plastic and refrigerate until firm (about one hour).
5) Roll the dough out rather thin and cut cookies out with cutters. Cut an additional hole out of half the cookies.
6) Brush the tops of the cookies with holes cut out with egg white. Sprinkle hazelnuts over the egg white. Bake at 350 for 8 minutes.
Assembly
1/4 cup fig preserves, or fresh, finely chopped figs.
1/4 cup finely chopped milk chocolate
1) Place a small amount of fig over the cookie with no holes.
2) Top with cookies that have the holes cut out. Press gently and sprinkle with milk chocolate.
